  1. Mix the pork with the salt, black pepper, paprika, crushed red pepper, fennel, italian seasoning, and wine vinegar.
  2. Get a large pot hot, add a bit of oil, and toss in the onion, carrot, and celery. Cook for 4-5 minutes, until they start looking softer.
  3. Toss in the sausage and let everything cook for another 4-5 minutes. The sausage does not need to be brown to proceed.
  4. Add the potatoes and bone broth. Bring to a simmer and simmer for 25 minutes or until the potatoes are cooked through
  5. Add the salt, heavy cream, and fresh parsley then stir unless well incorporated.
