italian potato soup
feeds 4-6
ingredients
- 1 lb ground pork
- pinch of salt for the pork
- 1 tpsn black pepper
- 1/2 tpsn paprika
- 1/4 tpsn crushed red pepper
- 1 tbsp ground fennel
- 1 tbsp italian seasoning
- splash of wine vinegar, red or white
- 1 onion, diced
- 3 carrots, peeled and diced
- 3 celery sticks, diced
- 3 cloves of garlic, minces
- 6-8 medium yellow potatoes, peeled and diced
- 32 oz of bone broth
- big pinch of salt for the soup
- 1/2 cup of heavy cream
- bit of minced fresh parsley
instructions
- Mix the pork with the salt, black pepper, paprika, crushed red pepper, fennel, italian seasoning, and wine vinegar.
- Get a large pot hot, add a bit of oil, and toss in the onion, carrot, and celery. Cook for 4-5 minutes, until they start looking softer.
- Toss in the sausage and let everything cook for another 4-5 minutes. The sausage does not need to be brown to proceed.
- Add the potatoes and bone broth. Bring to a simmer and simmer for 25 minutes or until the potatoes are cooked through
- Add the salt, heavy cream, and fresh parsley then stir unless well incorporated.
