lasagna soup

ingredients
- 12 oz ground beef
- 12 oz ground pork
- 1 tbsp ground fennel
- 1 tsp paprika
- big pinch of salt for sausage
- 1 tsp black pepper
- 1/2 tsp crushed red pepper
- 1 tbsp italian seasonings
- red wine vinegar (optional)
- 1/4 cup red wine
- 1 big can crushed tomatoes
- 8 - 16 oz of bone broth
- 1 onion, diced
- 3 small carrots, diced
- 3 cloves of garlic, minced
- salt to taste in soup
- 1 full bunch of parsley, minced
- lasagna noodles
instructions
- Mix the beef, pork, fennel, paprika, salt, pepper, red pepper, and italian seasonings in a bowl. Optionally, add a splash or two of red wine vinegar.
- In a large pot, cook the ground beef over medium heat until browned. Add the onion, carrots, and garlic and cook until softened.
- Deglaze (pour in and scrape the bottom) the pot with the red wine.
- Add the crushed tomatoes and bone broth to the pot. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Bring a different pot of water to a boil and add the lasagna noodles. Cook until al dente then drain and cut into strips.
- Add the noodles and parsley to the soup and serve hot.
