sausage au gratin
feeds 4 or good for a party
ingredients
- 1 lb ground pork
- 1 tbsp mustard, dijon if you have it
- 3 splashes white wine vinegar
- 2 tsp ground garlic
- pinch salt and pepper for the sausage
- 4-6 medium potatoes, peeled and sliced in rounds
- 2 onions, red or white, thinly sliced
- 1 cup milk
- 4 tbsp butter
- 3 tbsp flour, gluten free works
- springs of thyme
- 3 cloves of garlic, minced
- 1 cup reserved potato water (don't worry about this until you've started cooking the potatoes)
- 1/2 brick of shredded parmesan
instructions
- Mix pork, mustard, vinegar, garlic, salt, and pepper in a bowl. Brown this mixture in a large skillet over medium-high heat. Remove from heat and set aside.
- In the same skillet, add the onions and cook until they are soft and starting to carmelize. Cut the heat.
- Bring a pot of water to a boil. Add the potatoes and cook for 7 minutes. Reserve a cup of the water, then drain and set aside.
- While the potatoes are cooking, combine the milk, thyme, and minced garlic into a small pot and heat it up on medium-low.
- After draining the potatoes, use the same pot to melt the butter and add the flour. Stir until it's a paste. Add the milk mixture, potato water, and stir until it's smooth.
- Once integrated, add the parmesan, potatoes, and onions to the pot. Mix to combine and place in a glass baking dish. Spread sausage on top.
- Bake at 400 degrees covered for 45 minutes. Uncover and bake for another 5-10 minutes.
