  1. Mix pork, mustard, vinegar, garlic, salt, and pepper in a bowl. Brown this mixture in a large skillet over medium-high heat. Remove from heat and set aside.
  2. In the same skillet, add the onions and cook until they are soft and starting to carmelize. Cut the heat.
  3. Bring a pot of water to a boil. Add the potatoes and cook for 7 minutes. Reserve a cup of the water, then drain and set aside.
  4. While the potatoes are cooking, combine the milk, thyme, and minced garlic into a small pot and heat it up on medium-low.
  5. After draining the potatoes, use the same pot to melt the butter and add the flour. Stir until it's a paste. Add the milk mixture, potato water, and stir until it's smooth.
  6. Once integrated, add the parmesan, potatoes, and onions to the pot. Mix to combine and place in a glass baking dish. Spread sausage on top.
  7. Bake at 400 degrees covered for 45 minutes. Uncover and bake for another 5-10 minutes.
